Strawberry Cheesecake

INGREDIENTS LIST

Enjoy the classic taste of our Strawberry Cheesecake. Made with Deli Cheesecake Filling and layered with Vivafil Strawberry, this cheesecake is topped with a smooth coating of Carat Coverlux White RSPO chocolate. Perfect for those who love a creamy and fruity dessert, it offers a delicious and satisfying bite that caters to modern tastes.

PREPARATION

TART
  1. Combine all the Ingredients together then mix until homogenous. 
  2. Laminate to 5mm then cut with heart shaped cutters. 
  3. Transfer to a sheet tray lined with silpan then bake at 180c for 10 minutes.

 

CREAM-CHEESE MOUSSE

  1. Whip the cream to medium peaks then set aside.
  2. Bloom gelatin sheets to cold water.
  3. Make a pate a bomb Egg yolks, sugar and corn syrup.
  4. Add the cream cheese to the warm pate a bomb then continue mixing until smooth
  5. Melt the gelatin mass then add in the Lemon Extract.
  6. Fold-in whipped cream.
  7. Place the slicedFresh strawberries to the side of the 4” ring lined with acetate roll then fill the cream cheese mousse. Freeze overnight.

 

STRAWBERRY JELLY

  1. Bloom Gelatin powder with cold water then set aside.
  2. Combine the remaining ingredients then bring to simmer. Mix in melted gelatin.
  3. Pour on top of the frozen cream cheese mousse then freeze for 2 hours. Garnish with chocolate decorations and fresh strawberries.
