Unsalted Butter 120
Egg Yolk 100
Bruggeman Instant Yeast 10
Mixed Spice 1
Ground Cinnamon 1
Raisins 100
Sweet Dough total 1332
Topping
Cremyvit 100
Fresh Milk 200
Topping total 300

PROCEDURE: Sweet Dough
  • Mix all ingredients except raisins, using hook attachment at 3 mins. low speed then 8 mins. high speed or until we reach the window pane then put the raisins until well mixed with the dough.
  • Rest for 20 mins. Then scale into 50 gms. or desired weight. Roll it like a ball and place in a pan.
  • Rest for 45 minutes to 1 hour then brush with Sunset Glaze. Bake for 18-20 minutes at 180°C.

PROCEDURE: Filling & Topping
  • Mix the Cremyvit and fresh milk in a mixer using paddle attachment until smooth.
  • Pipe it on top of the bread after brushing with Sunset Glaze.
