  • Bring Festipak and glucose simmer.
  • Combine with the Dark chocolate then mix until smooth.
  • Add in the butter then mix until completely dissolved.

Canape Procedure

  • Transfer the Melba toast onto a sheet tray. 
  • Pipe the dark chocolate ganache onto the Melba toast, garnish with bleu cheese, citrus peals and caramelized nuts
