Chocolate Brownie Procedure

  • Combine all ingredients in a mixing bowl and mix for 3 minutes at low speed using a paddle attachment. Transfer the batter in a 12x16 Jelly roll pan

Orange Marmalade Procedure

  • Wash the oranges, cut them into pieces and take out the seeds (use the peel). Cook this together with the glucose in a Thermomix and add the pectin with the sugar. Cook and mix for 4 minutes in the Thermomix. Let the marmalade cool down. Spread 300 g of marmalade on each brownie.

Almond Paste Procedure

  • Roll out the Catania almond paste at 3mm an put this on top of the marmalade.

Enrobing Procedure

  • Cut the brownies in the desired shape and enrobe with tempered Belcolade Selection Lait Cacao-Trace
