Procedure Dough

  • Mix the ingredients using hook attachment, 3 mins. slow then 8 mins. at high speed or until we reach the window pane.
  • Rest for 30 mins. or until doubled it size.
  • Cut into 500g roll into a ball.
  • Rest for 20 mins then mold into desired shape.
  • Rest for about 45-60 mins at 37°C 85RH
  • Brush or spread the topping.
  • Bake for 18-23 mins at 220°C with initial steam.

Procedure Topping

  • Mix until it forms into a paste.
  • Brush or spread on top of the dough before baking.
