Strawberry Snow Bread

PREPARATION

<p>DOUGH</p>

•Mix the ingredients using hook attachment, 3 mins. Slow then 8 mins. High speed or until we reach the window pane. Add Belcolade Grains until properly  incorporated.

•Rest for 30 mins.

•Cut into 300gms roll into a ball.

•Rest for 15 mins.

•Flat and fill with Vivafil Strawberry, roll into a log.

•Cut horizontally and twist, make a round shape.

•Rest for about 45 mins.

•Brush with Sunset Glaze. Bake for 18-23 mins at 180°C


<p>SPONGE</p>

•Mix all ingredient for 5-7 min. until smooth.

•Rest in the proofer in 120minutes.


<p>TOPPING</p>

•Top in the dough after brushing with Sunset Glaze.


<p>FILLING</p>

•Fill into the dough.
