PROCEDURE

DOUGH

•Mix the ingredients using hook attachment, 3 mins. Slow then 8 mins. High speed or until we reach the window pane. Add Belcolade Grains until properly  incorporated.

•Rest for 30 mins.

•Cut into 200gms roll into a ball. Cut 3 pcs 10g roll into a log and braid.

•Flat and fill with Cremfil Ultim Hazelnut. Roll again into a ball.

•Use the braided dough to form a cross on top.

•Rest for about 45 mins.

•Brush with Sunset Glaze.

•Bake for 15-20 mins at 180°C

SPONGE

•Mix all ingredient for 5-7 min. until smooth.

•Rest in the proofer in 120minutes.

FILLING

•Fill into the dough.

TOPPING

•Top in the dough after brushing with Sunset Glaze.
