Winter Fairy Tree Stump Cake


Working Method

Red Velvet Sponge Cake
  • Fitted with a Paddle attachment
  • Combine all ingredients in a mixing bowl then mix until well incorporated.
  • Transfer in an 8x3 round pan lined with parchment paper.
  • Bake at 180° C for 1 hour or until a skewer inserted comes out clean.

Dark Chocolate Ganache
  • In a saucepot, bring cream to simmer.
  • Remove from the heat then mix into the chocolate.
  • Mix until smooth and no more lumps.

Christmas Tree
  • Whip Ambiante to stiff peaks.
  • To assemble: Cut the cake into 5 layers. Fill each layer with dark chocolate ganache.
  • Frost the cake with brown whipped cream.
  • Melt the ganache, dip the brush then spread on top of the cake, clockwise.
  • Pipe vertical and swirl ganache into the sides of the cake.
  • Cut a hole on top of the cake then fill with blue neutral glaze.
  • Transfer the Christmas tree whipped cream on top of the cake.
  • Pipe the mushroom and grass around the cake.
  • Sprinkle with snow powder and disco dust.
  • Place the fairies to the cake.
