White Chocolate Ube Cake




  • In a mixer, using a paddle attachment, mix all the ingredients for 3 minutes or until homogenous. Bake for 60-80 minutes at 180C or until cake test is done.
  • Melt the white chocolate and Montamix in microwave, mix until homogenous. Dilute the ube powder with the ganache then mix into the mixture.
  • Heat the cream to 90-100C, pour onto the chocolate then mix until homogenous. Chill the mixture for 12h at 4-C. Whip to stiff peaks.

To assemble: Cut the cake into three layers. Fill with ube ganache and white chocolate ube cream. Frost the cake with white chocolate ube cream. Freeze the cake. Dredge the ube crumbs onto the sides of the cake. Melt the white chocolate, spread onto the table with a spatula then scrape with a cookie cutter to make the shavings. Decorate with white chocolate shavings on top.
