Sourdough Brioche

INGREDIENTS LIST

This delightful bread marries the rich, buttery texture of traditional brioche with the tangy notes of sourdough. 

PREPARATION

  • Mix the ingredients except Mimetic 20 using hook attachment for 3 minutes slow then add Mimetic 20.  Continue mixing for 8 minutes of high speed or until we reach the windowpane.
  • Rest for 30 minutes or until doubled in size
  • Cut into 660g roll into a ball
  • Place in a load
  • Rest for about 60-90 mins of 37C
  • Brush with Sunset Glaze
  • Bake for 30 mins at 180C
