Passion Fruit Brulee Donut

Dough Procedure

  • In a mixer, using hook attachment, mix all the ingredients at low speed for 3 minutes then another 8 minutes at high speed or until gluten is formed. Rest for 15 minutes.
  • Sheet until 5mm and cut using preferred donut rings . Proof for another 45 minutes.
  • Dry out for 30 mins. Fry at 185C (30-45 seconds per side, depending on size).

Topping Procedure

  • Sprinkle sugar on top of the doughnut, blow torch until burnt effect is achieved
