Dough Procedure

  • Mix all ingredients in a stand mixer. 4 minutes on low speed then 8 minutes on medium speed, or until gluten is fully developed
  • Let the dough rest for 30 minutes.
  • Cut into your desired weight, shape each piece into a log then place into a heart-shaped mold.
  • Rest for 45–60 minutes.
  • Bake at 190°C for 30–45 minutes, depending on the size of the dough.

Filling and topping procedure

  • Mix the seeds and roll the dough before placing in the molder.
