Cube Grain Bread

Dough Procedure

  1. Combine dry and wet ingredients in a mixer. Mix on low speed for 5 minutes, then on high speed for 5 minutes.
  2. Let the dough rest for 30 minutes.
  3. Divide the dough into 120g portions, roll each portion in seeds to coat then place into cube molds.
  4. Proof for 45 minutes at 37°C and 87% relative humidity.
  5. Bake at 180°C top heat and 180°C bottom heat for 18–20 minutes, or until golden brown.
  6. Let the bread cool completely before serving.

TOPPING PROCEDURE

  1. Roll the dough before placing in the molder.
