Dough Procedure

  • Combine dry and wet ingredients in a mixer. Mix on low speed for 5 minutes, then on high speed for 5 minutes.
  • Let the dough rest for 30 minutes.
  • Divide the dough into 120g portions, roll each portion in seeds to coat then place into cube molds.
  • Proof for 45 minutes at 37°C and 87% relative humidity.
  • Bake at 180°C top heat and 180°C bottom heat for 18–20 minutes, or until golden brown.
  • Let the bread cool completely before serving.

TOPPING PROCEDURE

  • Roll the dough before placing in the molder.
