Classic Ube Cake

INGREDIENTS

PREPARATION

CAKE BASE

  • In a mixer, using a paddle attachment, mix all the ingredients for 3 minutes or until homogenous. Bake for 60-80 minutes at 180C or until cake test is done.
CHOCOLATE BUTTER SPRAY
  • Melt the chocolate with the cocoa butter at 40C then spray onto the frozen cake.
UBE CHANTILLY CREAM
  • Whip Ambiante, Deli Ube and Ube powder to stiff peaks.
  • To assemble: Cut the cake into three layers. Fill with Deli Ube and Ube Chantilly cream. Frost the cake with ube Chantilly cream. Freeze the cake. Make the chocolate belts, wrap around the cake. Pipe peaks of whipped cream on top of the cake

The exact origin of ube cake remain uncertain, but it is thought to have its beginnings in the Philippines.  Ube cake is a classic Filipino cake crafted using ube halaya, a mashed purple yam.  It possesses a vibrant purple hue, characteristic of dishes made with ube.  Over time, ube cake has evolved into more mainstream recognition which encouraged people to play around with the flavor by adding a variety of different ingredients.
