PREPARATION

  •  Mix for 5 minutes on 1st speed.
  • Continue mixing for 5 minutes on 2nd speed.

Note: Maintain dough temperature at 24°C (75°F).

  • Let the dough rest for 45 minutes.
  • Divide the dough into 350-gram portions
  • Shape each portion to half the desired length.
  • Allow the shaped dough to rest for 30 minutes.
  • Final shape the dough into baguettes, each 60 cm long.
  • Place the shaped baguettes in a humid environment (80% humidity) at 28°C (82°F) for 45 minutes.
  • Preheat the oven according to your standard baking temperature for baguettes.
  • Bake until golden brown and the internal temperature reaches the desired level.
