Dough
  • MIXING (SPIRAL): Mix for 2 minutes on low speed and another 5 mins on fast speed or until gluten is formed. Add pistachios and dried cranberries and mix again for 1 minute.
  • Rest for 20 mins.
  • Cut into 200g and 70g.
  • Roll into a ball.
  • Flat the 70g dough and cut holes using round cutter.
  • Re-round the 200g dough and dip into desiccated coconut.
  • Cover the round dough with the flattened dough with holes.
  • FINAL FERMINTATION: 40mins
  • OVEN TEMP (DECK): 210 ° C
  • BAKING TIME: 15-18 minutes
