Honey Almond Chinese New Year Cake

PREPARATION

Honey Cake

  • Combine all the Ingredients together. 
  • Mix for 4 minutes at medium speed.
  • Transfer to a 8x3 round pan. Bake at 180C for 70 minutes. Let it cool.

Honey Custard Cream

  • Whip Ambiante with the honey and Cremfil Classic Vanilla to stiff peaks.
  • To assemble: Cut the cake into 3 layers layers, then fill each layer with almond praline and honey custard cream Frost the cake with the same cream. Decorate with red and gold accents.

Almond Praline

  • In a saucepot, bring sugar and water to boil to caramelized, add the butter and almond to coat them in the caramel. 
  • Immediately transfer to a sheet tray lined with parchment paper then let it set. Break into pieces.
